Vegetarian main dishes

                       GREEN BEANS &
                          
BAKED TOFU

         1/2 pound of green beans - cut in 1 1/2 in pieces
         1 cup of baked tofu - cubed
         1/2 cup of water
         1 tablespoon of olive oil
         1/4 cup of cilantro
         1 tablespoon of soy sauce
         A dash of black pepper
         Cilantro for garnish

         Place 1/2 inch thick slices of tofu on a baking sheet
and bake at 350 degrees for 15-20 minutes - until tofu is
golden brown.

         Add the olive oil to the skillet and heat - then add
green beans and stir fry for a minute or two. Pour water  
over green beans and steam for a 2 minutes. Add tofu  
and seasoning and fry for 10 minutes. Be careful not to
overcook the green beans.

         Garnish with cilantro and serve over rice, polenta,  
or with potatoes.   Serves 4.

  in protein, minerals, and vitamins A,  
 B, B12 and C.

   Buy beans with a fresh, bright green  
 color and firm texture.
