Vegetarian main dishes
GREEN BEANS & BAKED TOFU
1/2 pound of green beans - cut in 1 1/2 in pieces 1 cup of baked tofu - cubed 1/2 cup of water 1 tablespoon of olive oil 1/4 cup of cilantro 1 tablespoon of soy sauce A dash of black pepper Cilantro for garnish
Place 1/2 inch thick slices of tofu on a baking sheet and bake at 350 degrees for 15-20 minutes - until tofu is golden brown.
Add the olive oil to the skillet and heat - then add green beans and stir fry for a minute or two. Pour water over green beans and steam for a 2 minutes. Add tofu and seasoning and fry for 10 minutes. Be careful not to overcook the green beans.
Garnish with cilantro and serve over rice, polenta, or with potatoes. Serves 4.
