Jicama Salad
Salad:  

Your choice of lettuce – mixed spring salad greens is best
One grapefruit peeled with white membrane picked clean -
separate into pieces and then  cut each piece in half
Green onions (4-5) chopped
One small Jicama peeled and cut julienne style


Dressing:

½ cup plain fat-free yogurt
1 Tablespoon honey
1 Tablespoon fresh-squeezed lime juice
1 jalapeno pepper - seeded and chopped
¼ teaspoon paprika

Place in food processor or blender; Blend together until
smooth
