    This wrap is stuffed with crispy tofu and couscous
with a hit of lemon and a healthy dose of fresh herbs.
Save any leftovers to wrap up for an easy lunch. Serve
with mixed green salad and a glass of crisp white wine.

Ingredients:

•        1/2 c. water
•        1/3 c. couscous
•        1 c. chopped fresh parsley
•        1/2 c. chopped fresh mint
•        1/4 c. fresh-squeezed lemon juice
•        3 Tbs. extra-virgin olive oil
•        2 tsp. minced garlic
•        1/4 tsp. salt, divided
•        1/4 tsp. freshly ground pepper
•        1 pkg. firm tofu – cut into bite-sized chunks
•        1 medium tomato, chopped
•        1 c. chopped cucumber
•        4 10-inch spinach or sun-dried tomato wraps or
tortillas

Directions:

1.          Bring water to a boil in a small saucepan. Stir in
couscous and remove from the heat. Cover and stand
for 5 minutes. Fluff with a fork. Set aside.

2.        Meanwhile, combine parsley, mint, lemon juice,
oil, garlic, 1/8 tsp. salt and pepper in a small bowl.

3.        Toss tofu in a medium bowl with 1 Tbs. of parsley
mixture and the remaining 1/8 tsp salt. Place the tofu in
a large nonstick skillet and cook over medium heat with
a little olive oil until cooked through.

4.        Stir the remaining parsley mixture into the
couscous along with tomato and cucumber.
