2 cups cooked chick peas 1 carrot, thinly sliced 1/2 head of broccoli florets 1/2 head of cauliflower florets 1/2 red bell pepper 1 red tomato 1 tablespoon oil 1 cup of water Tamari to taste 1 teaspoon fresh chopped coriander for garnish or 1 teaspoon fresh mint
Stir fry all ingredients until vegetables are slightly crunchy - do not over cook vegetables. Add tamari to taste or add a bit of shitake mushroom seasoning to bring out the taste of the vegetables.
Serve over rice or polenta and garnish with coriander or fresh mint.
